California Burritos




:We’ve heard of carne asada, carnitas, and the beloved bean burrito, but what about the California burrito? It’s typically a burrito with carne asada topped with a mountain of crispy, straight-from-the-fryer french fries. Then, it's poured with sour cream and topped with a mound of guacamole, all bundled up inside the world's softest tortilla from your favorite local Mexican food joint. Although I love eating California burritos, I wanted to make one at home when you’re looking to cut back on the richness of a traditional California burrito. In my take, I use lean ground beef instead of carne asada and roasted fiesta potatoes instead of fries. You can add so many customizations to this recipe for when you’re busy or you want to experiment with what tastes best; either way, the possibilities are endless.



California Burritos


Ingredients

  • ½ pound ground beef, seasoned to preference

  • 3 tablespoons guacamole

  • 1 tablespoon sour cream

  • Salsa of your choice

  • 1 cup cheddar cheese

  • 1 package mini potatoes

  • 1 tablespoon paprika

  • 1 tablespoon cumin

  • 1 tablespoon chili powder

  • ½ teaspoon pepper

  • ½ teaspoon salt

  • 1 tablespoon olive oil

  • Lettuce

  • Tomato

  • 1 package flour tortillas


Instructions

  1. Preheat oven to 450°F (230°C).

  2. On a baking sheet lined with parchment paper, arrange sliced mini potatoes.

  3. Drizzle potatoes with 1 tablespoon of olive oil and sprinkle with paprika, cumin, chili powder, salt, and pepper.

  4. Roast potatoes for 30-45 minutes until golden brown and cooked through.

  5. While the potatoes are roasting, prepare the ground beef to your preference.

  6. Warm the tortillas on a large flat pan over medium heat until just heated through. Remove and place on a clean workspace.

  7. Assemble the burritos: On each tortilla, layer guacamole, salsa, sour cream, ground beef, cheese, roasted potatoes, lettuce, and tomato.

  8. Roll the burrito: Fold the sides of the tortilla towards the center to make a long rectangular shape. Then, starting from the side closest to you, fold it over the filling and continue rolling tightly. Watch the video for visual instructions if needed.

  9. Once the burrito is rolled, return it to the pan over medium heat, seam side down. Cook for 2-4 minutes on each side until golden brown and crispy.

  10. Slice the burrito in half and serve with your favorite salsa.


Notes

  • You can substitute the ground beef with refried beans for a vegetarian option.

  • If you're short on time, you can use frozen potatoes or French fries.
